The secret to this starter is the thinly sliced fennel, quick-pickled for a hit of flavour served with slivers of smoked salmon and a super fresh orange-dill dressing. Followed by a seared ‘til crispy duck breast you’ll be serving with a warm grape and ezme sauce, sugar snaps and celeriac cubes.
